No Bake Chocolate Coconut Balls: Flour, Sugar, Egg, Dairy, Nut & Gluten Free

Don't these look like chocolate munchkins or doughnut holes you can buy from Dunkin Donuts?

If you have never heard of them before they are little balls of doughnut cut out of a large doughnut when making a hole in it sold at many coffee shops in New England. My kids LOVE them and I try to limit how often they can have them. They may not be a lot of calories but are full of white flour and white sugar I would prefer they don't have frequently.

Also for awhile now I've been wanting to come up with a no bake dessert. I've seen a bunch on Pinterest, but of course many contain nuts my boys can't have. I thought about combining the two ideas and came up with this recipe using dates to sweeten them. They are much heavier in texture than doughnut holes from the coffee shop and my kids loved them AND I loved I didn't have to bake them! Easy to whip up in a food processor in no time at all.

If you are able to have nuts they would give this a yummy crunchy inside. You could replace the chocolate chips with any nuts of your choice. You could also roll these in crushed nuts on the outside, that would be delightful!

My goal in the making of these was not low calorie or low fat but something nutritious as an alternative to doughnut holes at the coffee shop. Enjoy!

 

 

These would be perfect in the summer when you don't want to heat your house! If you're in the mood for more chocolate , you could make some fabulous Sugar-Free Brownies, or Dairy Free Sugar Free Chocolate Mousse ( no oven required for that either!)

No Bake Chocolate Coconut Balls: Flour, Sugar, Egg, Dairy, Nut & Gluten Free

Ingredients
  • 1 ¼cup coconut flakes, shredded, unsweetened
  • 4 tablespoons cocoa powder, unsweetened
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup chocolate chips*
  • 1 banana, mashed
  • ½ teaspoon chocolate liquid stevia
  • 9 dates, pitted, chopped
Instructions
  1. Blend one cup of the coconut flakes with the banana and cocoa in a food processor.
  2. A small amount at a time add the chopped dates to the food processor.
  3. Once thoroughly combined until smooth mix in the stevia, vanilla extract and salt.
  4. Place mixture into a bowl and stir in the chocolate chips.
  5. Place the ¼ cup of coconut flakes onto a plate.
  6. Make 14 small chocolate balls from the mixture then roll them into the coconut flakes. Refrigeration is not necessary, but if you are not eating them right away I would keep them in the fridge to stay firm until you are ready to eat.

Low Carb Chocolate Cream Banana Bites are an easy, no fuss dessert for kids and adults!

Make ahead the Sugar Free Low Carb Chocolate Frosting recipe and leave it in the fridge until ready to serve. Allow frosting to soften on the counter for about 30 minutes if it's been refrigerated overnight, then slice bananas and top them with this deliciousness, how easy is that?!

 

 

I'm not good with pastry decorating or using a pastry bag for decorating so I recently purchased a Wilton Dessert Decorator that makes life so much easier for me! Add frosting into this tube, insert tip, press and decorate. Easy to clean too! Here's what I have pictured below!  If you're not talented, as I am not, with a pastry bag this would be a well invested purchase to make!

The reason these little babies came to be is the fact that I had to make this frosting recipe about 3 times before I perfected it. And since this third time was the charm and I had nothing else to "frost", I gave the family the frosting like this, on bananas! AND.THEY.LOVED.IT. 🙂

You can't even really call this a recipe but I wrote it up so you would have the nutrition info for these bites in one place rather than have to go to the frosting recipe then add bananas to that and figure it out yourself. I'm estimating of course that the amount of frosting on each banana slice is approximately 2 tablespoons. So be careful, this frosting is GOOD and you could easily overdose on it.

I don't know about you but in the summer and warmer months I'm all about no baking recipes! I am a sucker for creamy, smooth in texture desserts that require little effort and time in the kitchen but are elegant enough to serve to company!

This dessert fits the bill! Made in under 15 minutes, seriously, it doesn't get any easier. Layered between sugar free whipped cream and topped with fresh berries. How could you not love this?

If you're unfamiliar with what a Raspberry Fool dessert might be, here's the low down on this funny named dessert.

According to Wikipedia, a Fool, is an English dessert, but no one knows why exactly the term Fool came to be known for it. Either way it's a crushed fruit mixed with a sweet cream or custard.

  • Place 12 ounces of raspberries in a bowl with the lemon juice and SweetLeaf® Liquid Stevia Berry Sweet Drops™. Mix well until thoroughly coated. Let the berries and lemon juice sit for about 10 minutes.

Entertaining in the summer is all about family, friends and good food right? While I totally agree and I'm all for providing my guests with incredible tasty food, I'm not into slaving all day in my kitchen to do it. I want to be outside too!

I want easy recipes, but ones that make my guests feel special. I want a comfortable and relaxing atmosphere that makes you want to sit and chat for hours. That's what summer to me is all about. Finding ways to energize myself, finding ways to recharge and just simplify life by enjoying the outdoors with my family and friends.

This summer and fall I've partnered with Kohl's to bring you just that. Easy entertaining ideas and excellent recipes that give you the most bang for you buck in the kitchen with minimal effort and time so you can enjoy the outdoors instead! Kohl's is encouraging families to make their move by living it up outside. My season of fabulous weather is short in New England so partnering with Kohl's on this is right up my alley. My first pick as I browsed through my local Kohl's store were these cool baskets and pretty BPA free plates. We were having friends over recently for a casual dinner so this worked liked a charm.

Place your plates, cups and bowls in one basket for easy grabbing for your guests when the food comes off the grill and sides are on the table. Use the second basket for utensils and napkins in mason jars!

This dessert sounds all fancy but it's anything but that. Pots de Creme is just a fancy French name for a custard really. It's usually served in porcelain cups, but I changed that up today.

Preparing them in individual mason jars makes for easy serving. Carry them from the fridge to the table and no other serving is needed. You too can sit and enjoy along with your guests! Topped with fresh berries and you're done!

I spied one more thing before leaving Kohl's on my first trip and it was this lantern you see above. The lantern is actually solar powered and just needs some time in the sun to charge. You always need some kind of centerpiece right? Essential maybe not? But for setting a relaxing dinner atmosphere,  my goal was accomplished.

By the time our dinner was complete the sun was down and I turned the switch on for lighting our lantern. The beauty of light without the worry of a candle burning, love it!

Most Pots De Creme recipes call for using eggs and egg yolks, straining the mixture and just a bit more tedious than I wanted to tackle. You'll find my recipe quicker, but just as delicious without sugar added and low carb. My guests loved it! I knew my kids would love it as its chocolate, but the pretty picky hubby surprised me and said he loved it too!

I believe I'm always #makingmymove! Whenever I have the opportunity to share sugar free recipes my guests might never had tried before and they discover they loved it, thrills me! And that's why I do what I do not only for my family but to encourage others to lead a healthier, but still tasty life with great food but without sugar.

Ingredients

Instructions

  • Whisk together the light cream, heavy cream, mayo and Swerve sweetener in a saucepan.
  • Heat mixture over medium heat but do not boil, until it thickens, about 4-5 minutes.
  • Remove from heat and stir in chocolate and coffee granules.
  • Continue to stir until smooth.
  • Remove from heat and add in the remaining ingredients.
  • Pour about ⅓ cup into six mason jars.
  • Cover and refrigerate until set, about 3 hours.
  • When ready to serve garnish with fresh berries andsugar free whipped cream.

This Low Carb Butterscotch Cheesecake Mousse is a no bake recipe that contains no added sugar and is quick and easy!

Afternoon snacks when everyone is done with school is something my family really looks forward to. They want a little something sweet and I want something easy. The butterscotch flavor is one they  have loved forever.

I actually had started a new recipe that I was thinking would have been great as truffles, but they just didn't form or set as I had hoped. Fortunately the flavor was so much like butterscotch I new I had a winner and had set out to make more of a pudding consistency. But after the kids had tried it, they actually said they preferred a thicker consistency, more like mousse. So I changed a few ingredients to make this a favorite new treat!

It truly blesses me when my kids love my no sugar added treats and ask when I will make them again. It makes me even happier when they come out even better than I expected!

Using Sukrin Fiber Gold Syrup is why this recipe tastes so much like butterscotch. If you've not tried it, I highly recommend it. It pours like maple syrup. It's fabulous on pancakes, waffles, a little drizzle for fruit, and great to sub maple syrup in recipes.

Brenda's Notes:

  • The Sukrin Fiber Gold Syrup is really what makes the butterscotch flavor. If you have some thing else you know of that pours like maple syrup and is sugar free, please let me know. Otherwise I highly recommend buying the Sukrin syrup, it is delicious!
  • If you are not sugar free, then go ahead and use maple syrup or honey to replace the Sukrin I used, also remove the vanilla stevia as it won't be needed.
  • The protein powder is needed and can not be eliminated. It is what helps this mixture thicken without the use of gelatin.
  • I drizzled more Sukrin syrup over the top for the pictures.
  • There are natural sugars in the dairy products.

  • Place the first six ingredients into a food processor and process until fine crumbs form. Set aside.

NO BAKE KETO MOUSSE

When you take just 4 simple ingredients and can turn them into a no bake dessert that tastes like a peanut butter cup in creamy mousse form, it's priceless! If you're all ready on board with a low carb, sugar-free way of eating, these ingredients will most likely all be in your fridge and pantry. With one simple substitute you can also make this keto mousse, peanut free if needed!

I adapted my No Bake Peanut Butter Cheesecake Mousse Pie to make this easy recipe for you today! No crust needed! Toppings are optional!

UNSWEETENED PEANUT BUTTER

Making no bake recipes in the summer is how I like to roll! Actually I like no bake recipes any time of year and mousse is my favorite!  Nothing artificial, no additives, just simple and spectacular for a mousse that will have even your non sugar-free friends won over!

No Sugar Added Peanut Butter isn't hard to find in most markets today. I usually buy it at Whole Foods, but online through Amazon, this is the Peanut Butter brand I love, nothing but peanuts and salt and super creamy.

SWAPS FOR PEANUT BUTTER 

If you're not a fan of peanut butter, you can simply swap it with your choice of nut butter, like, Macadamia ButterAlmond butter, Cashew butter or Sunbutter made from sunflower seeds for a nut free version!

PEANUT BUTTER CUP MOUSSE

My boys couldn't try this dessert because they have peanut and tree nut allergies but my hubby, sister in law and daughter were the taste testers.

Hubby said, "You should rename this PEANUT BUTTER CUP MOUSSE because it tastes JUST like one with the toppings!"

He thought is was so peanut buttery and did not notice any aftertaste which seems to always be his problem with stevia when I make a no bake recipe like this. He was pleasantly surprised! My daughter and sister in law absolutely loved it as well! Winning for all of us!

BEST LOW CARB SWEETENERS

If you're just not a fan of using liquid stevia as I have in this recipe, no problem! One of our newer favorite low carb sweeteners that doesn't leave an aftertaste, is Better than Sugar by Sweetleaf. They have a confectioners powdered sweetener which would be best for this recipe and they also have a granulated option. It's a combination of erythritol and stevia and has plenty of sweetness as sugar would provide.  Swerve confectioners sweetener is also low carb, but doesn't have as much sweetness and you may need to use a bit more to get this as sweet as you like.  Allulose would be another option, but again it isn't as sweet as using the Better than Sugar sweetener. Allulose comes in a liquid, which would probably work best in this recipe, but it also comes granulated if you prefer.

Low Carb Sugar-Free Peanut Butter Mousse

Servings 6 @3 ounces

Instructions

  • Whip the heavy cream in a stand mixer with the vanilla stevia or your choice of sweetener to taste. Once whipped remove and set aside.
  • Add the peanut butter and cream cheese together in the stand mixer and blend until smooth.
  • Fold the whipped cream into the mixture in the stand mixer until all incorporated.
  • Taste and adjust sweetener if needed.
  • Pipe into serving cups and refrigerate to set about 2-3 hours or overnight.

When you're on a special diet like being sugar free, low carb,  or keto, it's always nice to bring a dessert that you too can enjoy to parties, but also share with others who may not be low carb. This easy dessert pleases them all and everyone will be asking you for the recipe!

CAN I SWAP KETO SWEETENERS USED?

This is perfect for a holiday with family and friends.  Make ahead and just keep it in the fridge until you're ready to serve. It's creamy and naturally sweet with the strawberries. Adding just a small amount of berry flavored stevia helps bring it all together. Of course feel free to use whatever sweetener you prefer, just use a small amount then taste and adjust as needed.

Add as many or as little strawberries as you like. Nutritional information is based on using just 1 cup. If you're strawberries are all ready pretty sweet, skip any sweetener at all. Not a fan of strawberries? Try it with raspberries, blueberries or blackberries!

Honestly you could just eat this with a spoon but of course, that could lead to overindulging!  Here are some options for serving this dip with family and friends. If you are just not in the mood to turn that oven on, try one of these prepackaged cookies for dipping below!

Highkey cookies which come in a variety of different flavors, all keto and gluten free! Kiss my Keto cookies also has a variety of different flavors, but the one I think that would be best for this dip is the vanilla butter! Fat Snax cookies are another great brand of keto cookies and the lemony lemon cookie would be awesome with this dip!

Unfortunately all these keto cookie brands mentioned are made with almond flour so if you have someone with a nut allergy in the family, then don't buy them, just make my nut free cookies instead. My Keto Vanilla Wafers would be the perfect option or even my Keto Nut Free Chocolate Chip Cookies.  My kids could not get enough of this luscious, creamy dip. In fact they even liked it better than my Cookies & Cream Dip, I was shocked!

Low Carb Strawberry Cheesecake Dip

Ingredients

Instructions

  • Place the cream cheese in a stand mixer and blend on high until smooth. Scrape down sides and add pour in the heavy cream.
  • Blend on high speed until incorporated well.
  • Add in half the strawberries and blend on low speed just to mix the strawberries throughout.
  • Add the stevia and salt, blend then taste and adjust sweetness if needed.
  • Pour into a serving bowl. Top with remaining diced strawberries.
  • Keep refrigerated until ready to serve.
